\u201cTACO TUESDAY\u201d is a pretty well known term. In fact, many people use that term to plan meals for the week. It\u2019s so ingrained in my brain that I find myself craving tacos most Tuesdays. This Tuesday\u2019s cravings brought me to the best street taco food truck in town.<\/p>\n\n\n\n

It\u2019s the afternoon, I was short on time, and I had one thing on my mind; tacos for lunch. Of course, the obvious choice would be to head over to the Taco Bell drive thru, but I wanted something more. I wanted authenticity. I wanted flavor. I wanted an experience.<\/p>\n\n\n\n

I\u2019ve heard about a taco truck, called Taqueria Los Saucedo Tex Mex, that serves authentic tex-mex street tacos and various other foods such as, quesadillas and fajitas. There\u2019s just something about the sound of street tacos that\u2019s so alluring, and the idea of a taco truck means I can get it on the go. It didn\u2019t take much for my stomach to convince my brain to go searching for the popular blue food truck parked on the gravel lot near Elk River Trading Company.<\/em><\/p>\n\n\n\n

To satisfy my cravings, I ordered the Tacos Al Pastor plate. On my plate were three warm corn tortillas hugging mounds of chopped marinated pork, sprinkled with freshly diced cilantro and onions, topped with homemade hot salsa, accompanied by rice, barracks beans, limes, tomatoes, and lettuce.<\/p>\n\n\n\n

They say you eat with your eyes first, and my eyes were feasting on the beautifully put together pork tacos laid before me. This was the kind of authentic feel I was looking for, but it had a nice charm of appearing as something more profound; something you can serve at a more upscale place and be satisfied with. I was so excited to tear into my plate that I had to remind myself to take a second and appreciate the first bite; and I\u2019m glad I did. As I took that first bite, the juices of the al pastor marinade filled my mouth with a medley of bold spices and herbs; the flavors you think of when you think of Mexican cuisine. The tenderness of the meat was no surprise either. After sitting in the marinade, and slowly cooking its way to perfection, it was nothing short of a melt-in-your-mouth experience. The crisp onions and freshly chopped cilantro added a beautiful contrast of crunch that made its way through my smile as I impulsively muttered the words, \u201cI have to taco-bout this.\u201d GN<\/p>\n","protected":false},"excerpt":{"rendered":"
