Kahlua Chocolate Cake<\/strong><\/p>\n\n\n\n

3 eggs, separated<\/p>\n\n\n\n

3\/4 c. sugar<\/p>\n\n\n\n

1\/2 c. butter<\/p>\n\n\n\n

1 c. light brown sugar, packed<\/p>\n\n\n\n

2 1\/4 c. AP flour<\/p>\n\n\n\n

1\/2 c. cocoa, unsweetened<\/p>\n\n\n\n

1 1\/2 t. baking soda<\/p>\n\n\n\n

3\/4 c. strong cold coffee<\/p>\n\n\n\n

3\/4 c. Kahlua\u00ae<\/em><\/p>\n\n\n\n

Grease and flour two 9\u201d cake pans. Preheat oven to 350\u00b0. In a medium mixing bowl, beat egg whites until frothy. Beat in sugar until soft peaks form and set aside. Cream butter and brown sugar until fluffy in a large mixing bowl. Beat in egg yolks one at a time. In a medium mixing bowl, sift flour, cocoa, and baking soda together. Add flour mixture to the creamed mixture, alternating with coffee and Kahlua\u00ae. Blend well. Fold in egg whites into batter. Pour into prepared pans. Bake for 30-35 minutes or until done. Cool 10 minutes, invert on wire rack; remove pans. Cool cake before frosting.<\/p>\n\n\n\n

Asparagus with lemon butter<\/strong><\/p>\n\n\n\n

1 bunch asparagus<\/p>\n\n\n\n

3 qts. water<\/p>\n\n\n\n

4 1\/2 t. salt<\/p>\n\n\n\n

1\/4 c. unsalted butter<\/p>\n\n\n\n

1 T. lemon juice<\/p>\n\n\n\n

1\/8 t. black pepper<\/p>\n\n\n\n

sliced lemon for garnish<\/p>\n\n\n\n

Trim 1\/2 inch from the bottom of asparagus. Using a vegetable peeler, peel stalks. In a saucepan, bring water to a boil. Add salt. Add asparagus and bring water back to a boil. Boil until asparagus are tender. Drain and transfer to a paper towel to drain completely. Melt butter in a small saucepan over medium heat. Stir in lemon juice and pepper. To serve, arrange hot asparagus on a serving platter. Pour the warm lemon sauce over the asparagus. Garnish with lemon slices.<\/p>\n\n\n\n

Peppered Ribeye Steaks<\/strong><\/p>\n\n\n\n

4 beef rib steaks, 1 1\/2\u201d thick<\/p>\n\n\n\n

1 T. olive oil<\/p>\n\n\n\n

1 T. paprika<\/p>\n\n\n\n

1 T. garlic powder<\/p>\n\n\n\n

2 T. dried ground oregano<\/p>\n\n\n\n

2 t. dried ground thyme<\/p>\n\n\n\n

1 1\/2 t. pepper<\/p>\n\n\n\n

1 t. salt<\/p>\n\n\n\n

1 t. lemon pepper<\/p>\n\n\n\n

1 t. ground red pepper<\/p>\n\n\n\n

parsley sprigs, to garnish, optional<\/p>\n\n\n\n

orange slices, to garnish, optional<\/p>\n\n\n\n

Brush steaks lightly with olive oil. Combine paprika, garlic powder, oregano, thyme, pepper, salt, lemon pepper and red pepper in small bowl and sprinkle over steaks, pressing into both sides. Cover; chill for 1 hour. Grill steaks over medium-hot coals, turning once. Cook 14-18 minutes for rare, 18-22 minutes for medium, and 24-28 minutes for well-done.
