THE WORDS “back to school” can stir up many different emotions. Some young parents hear “school” and are instantly filled with dread and anxiety. Leaving their wide eyed babes for the first time can make for heavy hearts and tear-stained eyes in the parking lot. For other seasoned parents, having their kids out of the house for eight hours a day sounds like just the vacation they have been dreaming of all summer long! Whether “back to school” stirs up a great deal of delight or a little fear, we encourage you to make returning to school memorable for your children, especially in the kitchen! Below, we have gathered some perfectly tart recipes that are classroom approved!
APPLE OATMEAL CRISP: SUBMITTED BY DOT GOLSBY
INGREDIENTS: 3-4 medium tart apples, peeled and sliced, 3/4 c. rolled oats, 3/4 c. packed brown sugar, 1/2 c. flour, 1 t. cinnamon, 1/2 c. margarine
DIRECTIONS: Spread apples on a 9” pie plate. Set aside. In a medium mixing bowl, mix oats, sugar, flour, and cinnamon. Cut in margarine with a fork or pastry blender. Sprinkle evenly over the apples. Bake at 350° for 35-45 minutes or until apples are tender and the topping is crisp and brown.
OATMEAL AND APPLE BUTTER BARS: Submitted by Martha Hemphill
INGREDIENTS: 1 1/4 c. flour, 1 c. brown sugar, 3/4 c. butter, 1 1/4 c. oats, 3/4 c. apple butter
DIRECTIONS: In a medium mixing bowl, combine flour and sugar. Cut in butter. Stir in oats. Press half the mixture firmly in a greased 8-inch square pan. Spoon apple butter over the oat mixture. Add remaining oat mixture over apple butter. Press carefully, but firmly. Bake at 350˚ for 40 minutes. Cut into 16 bars.
APPLESAUCE PLUS MUFFINS: Submitted by Barbara LaLonde
INGREDIENTS: 2 c. all purpose flour, 1/2 c. sugar, 2 t. baking powder, 1/4 t. baking soda, 1/4 t. salt, 1 lg. egg, 1/2 c. milk, 1 c. applesauce, 1 t. cinnamon, 1 apple, peeled, cored, chopped
DIRECTIONS: In a medium mixing bowl, sift together flour, sugar, baking powder, baking soda, and salt. In a small mixing bowl, beat egg and add milk, applesauce, and cinnamon. Add the egg mixture to the flour mixture. Blend until well moistened: stir in apples. Pour mixture into greased muffin tin. Bake at 375° for 25-30 minutes
