DID YOU know the holiday involving copious amounts of green beer is actually an Irish holiday celebrating Christianity? It is! In fact, the holiday is held each year on the anniversary of Saint Patrick’s death. Saint Patrick was a patron saint who lived during the fifth century. He was born in Roman Britain but later was kidnapped and brought to Ireland as a slave. During his time enslaved, he grew in his relationship with and affection for God. He did eventually escape from captivity but later chose to return to Ireland to bring the good news of Jesus Christ back to the land. So as you go about preparing your St. Parick’s Day feasts and treats, don’t forget to remember the Good News! We hope you eat, drink, and be merry!
My Old Fashioned Bread Pudding: Submitted By Debra Gold
Ingredients-
1/2 c. dark raisins
1/2 c. brandy
1/4 c. butter or margarine
8 slices white bread, lightly toasted 1 c. light brown sugar, firmly packed 1 t. ground cinnamon
1/4 t. allspice
3 eggs
1/4 t. salt
1 t. vanilla extract
3 c. milk, scalded and cooled
Directions: Cover raisins with brandy in a bowl. Set aside. Spread butter or margarine on each bread slice. Cut bread into 1” cubes. Set aside. Combine brown sugar, cinnamon, and allspice in a bowl, reserving 3 tablespoons. Toss bread cubes in the bowl of sugar mixture. Place half of bread cube mixture in lightly greased 1 1/2 quart casserole dish. Drain raisins and place over bread cubes. Repeat layers. Combine eggs, salt, and vanilla in a medium bowl. Beat with electric mixer on medium speed for 1 minute. Gradually stir in milk. Pour over bread cubes. Let stand for 5 minutes. Sprinkle reserved sugar mixture over top. Bake at 325° for 45-50 minutes. Serve warm.

Ingredients-
3 c. SR flour
1 t. cream of tarter 1/2 – 1 c. buttermilk
Directions: Preheat oven to 400°. In a large mixing bowl, mix together flour and cream of tarter. Add enough buttermilk until it’s easy to work with. It should belike biscuit dough. Turn onto floured surface and roll into desired thickness, adding flour as needed. Using a pizza cutter, cut into triangles and place on a buttered cookie sheet. This dough does not rise very much, so do not roll out too thin. Bake 15 minutes.

Ingredients-
1 3/4 c. sugar
1 c. oil
3 eggs
2 c. SR flour
1 t. cinnamon
2 c. apples, grated
1 c. pecans, chopped 1/2 c. coconut
1/2 c. milk
1 t. vanilla
1/2 stick margarine 1/2 c. sugar
Directions:In a large bowl, mix 1 3/4 c. sugar, oil, and eggs. Beat well. Stir in flour and cinnamon. Add apples, nuts, and coconut. Mix well. Pour into a 9x13sheet cake pan. Bake at 350 ̊ for 45 minutes. While cake is baking, prepare glaze. In a saucepan, mix milk, vanilla, margarine, and 1/2 c. sugar and cook over low heat for 15 minutes. Punch holes in warm cake and pour glaze over cake. -GN
