WHEN I pulled up to this retro-style camper, I had no idea I was in for such a treat. I heard there was a food truck making spaghetti grilled cheeses and I knew I had to try this out. I was greeted by two lovely women, the owners, and immediately felt welcomed. They were excited to be there serving the people of Shelbyville with a smile on their faces and excellent customer service.
Sadly but not surprisingly, they were sold out of the spaghetti for their grilled cheese, so I ordered the Chicken Parmesan Grilled Cheese and was thoroughly surprised. What would normally be a dish I would make for dinner was now in sandwich form and easily accessible for lunch. The chicken was perfect- ly fried and moist on the inside with melty cheese on top. The fried chicken still retained its sig- nature crunchy exterior and the sauce was the perfect ratio, mak- ing this sandwich not soggy or messy. The bread was toasted to a perfect crisp which brought great contrast in texture with every bite.
I was also the first customer to ever try their buffalo chicken grilled cheese, something I love to eat in the form of a dip. With this first bite, I knew they had struck grilled cheese gold. Once again the bread was perfectly toasted, which allowed it to hold up to the consistency of the buf- falo chicken dip that was inside. It was mouthwatering and not too overpowering, which can happen with buffalo sauce.
To wash this all down, I or- dered one of their signature fresh squeezed lemonades, with a blueberry shot. The fresh blue- berry flavoring took this already perfected lemonade to a new lev- el of refreshing. I’ll never be able to drink lemonades the same way again without thinking of this wonderful, hand-crafted drink.
The Fruity Lemon has suc- cessfully taken the tradition- al idea of a grilled cheese and skyrocketed it to new heights, which leaves me wanting more. I have to thank these women for opening my eyes to new possi- bilities; I cannot wait to see the next sandwiches they create.
